Blueberry-orange French Toast Recipe

Ingredients
  • 1/4 c margarine or butter, melted .
  • 1/3 c sugar .
  • 1/2 c orange marmalade .
  • 1/4 c sugar .
  • 1/4 c orange juice .
  • 6 eggs .
  • 1/4 tsp ground nutmeg .
  • 1 1/2 c half-and-half .
  • French Toast .
  • 16 slices day-old French bread, 1 inch thick .
  • 2 c fresh blueberries or frozen blueberries .
  • Syrup .
  • 2 tsps vanilla .
  • 1 tsp cornstarch

Directions
  • Step #1 In 1-quart saucepan, mix 1/3 c sugar, the cornstarch & orange juice until smooth; stir in the blueberries.
  • Step #2 Heat to boiling over med-heat/flame, stirring often.
  • Step #3 Boil 3 mins, stirring often.
  • Step #4 Spray jelly roll pan (15-1/2 x 10 x 1/2 inch) with cooking spray.
  • Step #5 Cut lengthwise slit in side of each bread slice, cutting to but not through other edge.
  • Step #6 Spread marmalade inside slit.
  • Step #7 Place in jelly roll pan.
  • Step #8 In large bowl, beat eggs, 1/4 c sugar, half-and-half, nutmeg & vanilla until well mixed.
  • Step #9 Pour over bread; turn slices carefully to coat.
  • Step #10 Cover up & put in the fridge 8 hrs or overnight.
  • Step #11 Heat oven to 425°.
  • Step #12 Uncover French toast.
  • Step #13 Drizzle with melted margarine (or butter).
  • Step #14 Bake 20 to 25 mins or until golden brown.
  • Step #15 Serve with Blueberry-Orange Syrup.
