Step #2 In a large mixing bowl, mix the flour, baking powder & salt.
Step #3 Mix well.
Step #4 Add 1 tbsp of the cold butter & the cold shortening & work it into the dry ingredients, using your hands, until the mixture resembles coarse crumbs.
Step #5 Stir in the milk.
Step #6 The dough will be sticky.
Step #7 Dust your work surface with some flour.
Step #8 Turn the dough onto the floured surface.
Step #9 Gently fold each side toward the center.
Step #10 Pick up the dough & dust the work surface with extra flour.
Step #11 Return the dough to the floured surface & fold each side towards the center again.
Step #12 Turn the dough over & press it out to 1-inch thickness.
Step #13 Cut the biscuits, do not twist the cutter, straight down, with a 2 1/4-inch round cookie cutter.
Step #14 Melt the remaining tbsp of butter & add to a 10-inch round cake pan.
Step #15 Place the biscuits in the pan, turning once (to coat both sides with butter), about 1/4-inch apart.
Step #16 Let the biscuits rest for 15 mins before baking.
