Chicken And Melon Kabobs Recipe

Ingredients
  • 1/2 tsp dried rosemary .
  • 2 tbsps peach preserves or apricot preserves .
  • 2 tbsps balsamic vinegar or red wine .
  • 1/4 tsp ground cumin .
  • 16 green onions (1/2-inch pieces) .
  • 1/8 tsp salt .
  • ground red pepper, to taste .
  • 1/8 tsp ground coriander .
  • 4 boneless skinless chicken breast halves .
  • 1 tbsp olive oil .
  • 1/2 cantaloupe, 1 1/2-inch dice .
  • 2 garlic cloves, minced .
  • 1/8 tsp black pepper

Directions
  • Step #1 Heat oil in a small saucepan, add spices & cook 1 min.
  • Step #2 Remove from heat, cool & add vinegar.
  • Step #3 Cut each breast 1/2 into 1" pieces.
  • Step #4 On four skewersalternate chicken cantaloupe & green onion.
  • Step #5 Brush all surfaces with vingegar mixture.
  • Step #6 Place skewers on un-heated broiler pan & broil 4-5 inches from heat for 5 mins.
  • Step #7 Stir preserves into remaining vinegar mixture.
  • Step #8 Brush on kabobs, turn kabobs & brush again.
  • Step #9 Broil 3-5 minslonger or untuil chicken is tender & no longer pink.
