Fried Rice With 5-spice Bacon Recipe

Ingredients
  • 1 scallion, thinly sliced on an angle .
  • 1 c fresh peas .
  • 4 tbsps fresh ginger, peeled & grated .
  • 2 small carrots, shredded (a couple of handfuls) .
  • 1 red bell pepper, seeded & thinly sliced .
  • 1 lb bacon, sliced thinly .
  • 2 c chicken broth .
  • 1/2 c tamari (dark soy sauce) .
  • 2 tsps Chinese five spice powder .
  • 2 large eggs, beaten .
  • salt & freshly ground black pepper .
  • 5 tbsps olive oil, divided .
  • 1 1/2 c long-grain white rice .
  • 3 garlic cloves, finely sliced

Directions
  • Step #1 In a medium saucepan, bring the broth & 3/4 c water to a boil.
  • Step #2 Stir in the rice, cover & cook over low heat/flame for about 18 mins.
  • Step #3 Alternatively, use a rice cooker to prepare the rice.
  • Step #4 In a large, deep nonstick skillet or wok, heat 2 tbsps oil over high heat.
  • Step #5 Spice up the pork with salt, pepper & the five-spice powder.
  • Step #6 Add to the pan & stir-fry for 3 mins.
  • Step #7 Transfer to a plate.
  • Step #8 Heat 1 tbsp oil in the skillet, then add the eggs & scramble for 2 mins.
  • Step #9 Push the eggs to the side of the pan, add the remaining 2 tbsps oil & lower the heat to medium.
  • Step #10 Add red bell pepper & carrots & stir-fry for 2 mins.
  • Step #11 Add the scallion, peas, garlic & ginger & stir-fry for 1 min.
  • Step #12 Add the cooked rice & crisp it for a couple of mins.
  • Step #13 Stir in the tamari & reserved pork.
