Pepper Steak Recipe

Ingredients
  • 1 1/2 c beef consomme (I use Campbell's) .
  • 1 tbsp low sodium soy sauce .
  • 2 tbsps all-purpose flour .
  • 1/2 c sliced mushrooms .
  • 1 tbsp tomato paste .
  • 2 green bell peppers, thinly sliced .
  • 1 garlic clove, minced .
  • 1/4 c dry sherry .
  • 1/2 onion, sliced .
  • 2 lbs sirloin, sliced thin .
  • 2 tbsps vegetable oil .
  • 1/2 tsp black pepper .
  • 2 tbsps butter .
  • 1/8 tsp ground ginger

Directions
  • Step #1 Slice the meat while still partially frozen to make it things much easier.
  • Step #2 Preheat a large skillet over high heat.
  • Step #3 Add oil to really hot pan.
  • Step #4 Add meat & sear on all sides, 5 mins.
  • Step #5 Spice up lightly with salt & remove to a plate.
  • Step #6 Cover up meat loosely with foil wrap to hold heat.
  • Step #7 Reduce heat on pan to medium.
  • Step #8 Add butter to pan.
  • Step #9 Add peppers, garlic, onion & mushrooms to pan.
  • Step #10 Saute vegetables 5 mins.
  • Step #11 Sprinkle top flour over vegetables & cook 1 min longer.
  • Step #12 Whisk in sherry & start to pick up pan drippings.
  • Step #13 Whisk in consomme & continue whisking.
  • Step #14 Add tomato paste, ginger, soy sauce & black pepper.
  • Step #15 Slide meat back into the pan & coat with sauce.
  • Step #16 Reduce heat to low & let simmer 5 mins.
  • Step #17 Serve over hot, cooked rice.
