Betty Crocker's Fresh Tomato Salsa Recipe

Ingredients
  • 1 Green or red bell pepper; sliced
  • 1 ts Ground cumin
  • 1 ts Ground coriander
  • SAUCE
  • 2 tb Tamari soy sauce
  • 1 c Water
  • 1 ts Ground fennel seeds
  • 4 ds Tabasco sauce; or other hot sauce
  • 1 ts Chili powder
  • 2 tb Fresh lemon juice
  • 1 lb Tempeh or 3 cakes of extra-firm tofu; cubed
  • 1/8 ts Cayenne pepper
  • 1 7 oz can tomato paste
  • 1 c Onions; finely sliced
  • 2 tb Cider vinegar
  • 3 tb Vegetable oil
  • 3 tb Molasses or brown sugar
  • 1 tb Prepared mustard

Directions
  • Step #1 For tempeh: Saute the onions, garlic & spices until the onions begin to soften.
  • Step #2 Add the peppers & tempeh & continue sauteing until the peppers brighten & the tempeh browns.
  • Step #3 Transfer this mixture to a shallow baking pan.
  • Step #4 Whisk together the sauce ingredients & pour them over the vegetable-tempeh mixture.
  • Step #5 Bake covered at 350?F for 1/2 hr and uncovered for another 1/2 hr, stirring frequently throughout.
  • Step #6 For tofu: Saute the vegetables & spices.
  • Step #7 Whisk together the sauce ingredients.
  • Step #8 mix the sauteed vegetables & the sauce & pour over the tofu cubes in a shallow baking pan.
  • Step #9 Bake as directed for tempeh, stirring very carefully to avoid breaking the tofu cubes.
  • Step #10 Serve on rice with a side dish of cole slaw or greens.
  • Step #11 Or pack it into a pita bread to make a sandwich.
