  • Step #1 ---CRUST------ 1 c Graham Wafer Crackers 2 Tablespons sugar 2 tb Margarine; melted 1/2 ts Almond extract flavoringFOR FILLING--- 2 tb Unflavored gelatin powder; -(I use Knox brand) 1 1/4 c Canned milk; (skim) 2 ts Lemon rind; grated 2/3 c Sugar 1 ts Pure vanilla extract 2 1/2 Cottage cheese; (1% milk -fat)FOR TOPPING--- Cherry Pie Filling or -Blueberry Sauce; seeded and -cut into ; strips 1.
  • Step #2 Put Graham crumbs into a bowl.
  • Step #3 Melt the margarine & stir in the the sugar & almond extract to the margarine.
  • Step #4 Add to the Graham crumbs & stir until evenly distributed.

  • Step #6 Press crumb mixture into the bottom of a 9x9 glass Pyrex dish, or a round 9" sprin-form pan (the kind with removable sides).
  • Step #7 put in the fridge.

  • Step #9 In a food processor/blender, beat the cottage cheese until satiny smooth (very important for a smooth texture).

  • Step #11 Scald the milk (microwave for about 2-3 mins).
  • Step #12 While it is heating, soften gelatin powder in c of cold water & let this stand 1 min.
  • Step #13 mix these two ingredients along with the sugar, vanilla & lemon peel.
  • Step #14 Add to the "smooth" cottage cheese mixture & carefully beat just until mixd.
  • Step #15 Don't over whip, creating a lot of foam.

  • Step #17 Pour mixture into your prepared pie crust & put in the fridge until set.
  • Step #18 Decorate or serve this with Cherry Pie filling or Blueberry sauce.
