Step #2 Place the rinsed beans in a bowl, add 2 to 3 c of water & soak overnight.
Step #3 Check the beans every once in awhile & add water as necessary to keep them moist.

Step #5 Pour the beans & the water in which they were soaked into a heavy saucepan & add 2 to 3 more c of water.
Step #6 Bring to a boil over medium-high heat, then lower heat & let simmer, for about 45 mins, partially covered, until the beans are cooked but still firm.

Step #8 Drain the beans, reserving the cooking liquid.

Step #10 Melt the lard in a heavy skillet over med-heat/flame.
Step #11 Add the beans & lightly fry them in the lard.

Step #19 Break up any lumps with a fork & cook, stirring every once in awhile, until the meat is very well browned.

Step #21 Add the reserved bean-cooking liquid to the pot.
Step #22 stir in the all the remaining ingredients.
Step #23 Bring to a boil, uncovered, then lower the heat & cook, for 1/2 hr longer.
Step #24 Stir every once in awhile.
Step #25 Add water only if necessary to maintain the consistency of a chunky soup.
Step #26 =B6 7.
Step #27 Taste when curiosity becomes unbearable & courage is strong.
Step #28 Adjust Spice upings.
