A Favourite French Sponge Cake Recipe

Ingredients
  • 6 Cloves, whole
  • Hot pepper, toasted and
  • 1/4 ts Nutmeg, grated
  • 2 tb Turmeric, ground
  • 1 tb Cumin seeds
  • Dried
  • 1 tb Mustard seeds
  • 1 ts cardamom
  • 3 tb Coriander seeds
  • 2 1/2 ts Fenugreek
  • 1/4 ts Ground mace
  • 1 3 in cinnamon stick, thin
  • & broken into pieces
  • Seeds
  • 1 Big pinch cayenne

Directions
  • Step #1 preheat your trusty oven to 225 degree F.
  • Step #2 In a small pan, cardamom, cumin and mustard seeds, coriander, mix fenugreek, cloves, & broken cinnamon stick.
  • Step #3 Bake for 15 mins, shaking the pan a few times.
  • Step #4 Let cool.
  • Step #5 In bowl, nutmeg, mix the toasted spices with the mace, cayenne, tumeric & peppers.
  • Step #6 place this in a spice mill & grind to a powder.
  • Step #7 store this in an airtight container.
  • Step #8 Makes a 1/2 c of curry powder.
