Step #1 preheat your trusty oven to 220c/425f/Gas 7.
Step #2 1 Halve the leek & rinse well.
Step #3 Fill a deep pan one third full with vegetable oil & heat.
Step #4 Cut one leek half into thin strips & deep fry until brown & crisp.
Step #5 Drain on kitchen paper.
Step #6 2 For the Omelette: Beat the eggs in a bowl, add 55g/2oz grated cheese & the double cream.
Step #7 Heat an omelette pan, pour in the egg mixture & add the sliced chives.
Step #8 Cook carefully, stirring to draw the mixture from the edge of the pan to the centre as it cooks.
Step #9 Serve the omelette on a plate.
Step #10 3 Cook the potato in a pan of boiling water until tender.
Step #11 Cut the remaining leek into thin rings & dice two bacon rashers.
Step #12 Heat 1 tbsp olive oil in a frying pan with the sliced bacon & stir in the half the leek rings, 1 tbsp sliced parsley, breadcrumbs & 25g/1oz grated cheese.
Step #13 4 Place one mackerel fillet on a baking sheet skin-side up & spoon the breadcrumb mixture on top.
Step #14 Cook in the oven for about 8-10 mins, or until cooked through.
Step #15 5 Heat 1 tbsp olive oil & 15g/ 1/2oz butter in a frying pan.
Step #16 Add the tomato chunks & 1/2 tbsp sliced parsley & cook this until the tomato is softened.
Step #17 6 Drain & mash the potato with the mustard & 15g/ 1/2oz butter.
Step #18 Serve the baked fish with the mash & tomatoes & Sprinkle top it over the deep fried leeks.
Step #19 Remove the skin from the remaining mackerel fillet & Sprinkle top it over the sliced dill & chervil.
Step #20 7 Use the back of a knife to stretch out the remaining bacon & then wrap the bacon around the fish & secure with a cocktail stick.
Step #21 8 Heat a griddle pan, add the mackerel & cook for 4-5 mins on each side, adding the lime & lemon halves & remaining leek rings to the pan halfway through cooking.
Step #22 Serve on a plate.
