A Midsummer Night's Dream Recipe

Ingredients
  • 15 g Demerara sugar
  • 1 Dsp sherry
  • 115 g Couscous; up to 170
  • 1/2 Egg; lightly beaten
  • 2 Pork fillets; approximately 680g each in weight
  • 115 g Dried apricots; sliced
  • 115 g Sultanas
  • 15 g Demerara sugar
  • 70 ml Dry sherry
  • 280 ml Boiling water

Directions
  • Step #1 --TO ROAST----- 2 Dsp olive oil 2 Dsp sherry 2 Dsp honey Salt & pepper Prepare the pork fillet by removing any visible fat then slice down the centre & flatten out with a rolling pin until the pork fillet is quite thin.
  • Step #2 Sprinkle top with sherry & 1/2oz demerara sugar.
  • Step #3 Pour the boiling water over the couscous & leave for 15-20 mins until the couscous swells up & almost doubles in size.
  • Step #4 It will absorb the liquid as it sits.
  • Step #5 Mix together the sliced apricots & sultanas, pour over the sherry & a Sprinkle top of demerara sugar.
  • Step #6 Leave to sit for 15 mins then mix together with the couscous, sliced parsley & lightly beaten egg.
  • Step #7 When well mixed, spoon over the pork, flatten down well & roll up from end to end.
  • Step #8 Secure with string or skewers.
  • Step #9 Transfer to a foil lined dish, marinade of sherry & honey, pour over a little oil, add salt & pepper & roast in the oven at 180C/350F/gas 5 for approximately 1 hr.
  • Step #10 Again, the cooking time will vary with the thickness of the pork but allow at least 1 hr for the pork to be well cooked.
  • Step #11 If the two are being sandwiched together with the stuffing then cooking time will be approximately 1 1/2-2 hrs.
