Step #1 Carefully pick over & rinse lentils.
Step #2 Add onions & garlic to a deep saucepan & saute in oil until very soft but not browned.
Step #3 Add lentils & stock or water & bring to a boil.
Step #4 Reduce heat, cover & let simmer carefully for 20 to 25 mins or until lentils are very tender.
Step #5 Puree mixture with an upright or immersion mixer adding stock or water to yield desired thickness.
Step #6 Spice up to taste with salt & pepper.
Step #7 This recipe yields about 2 c of sauce.
Step #8 Comments: This is a healthy, almost non-fat "sauce" that uses pureed lentils to give it richness & body.
Step #9 You can use other lentils too, black, white, such as, green or common brown.
Step #10 You can add Spice upings & flavorings of your choice, a good toasted curry powder, sliced herbs, ground pure chile powder, such as, etc.
