Alaska Salmon Nuggets Recipe

Ingredients
  • 4 Sheets gelatine or 4-5tsp gelatine; granules
  • Angelica & fruit to garnish
  • 900 ml Double cream
  • 300F ml Single cream or full cream milk
  • 1 Dsp caster sugar;

Directions
  • Step #1 Soften the gelatine in a little water & then drain it.
  • Step #2 Heat the cream (and milk if you're using it) to blood heat & then add the sugar & drained gelatine.
  • Step #3 Stir until both have dissolved & allow to cool.
  • Step #4 Before the mixture begins to set, pour it into a wet pudding basin.
  • Step #5 put in the fridge overnight.
  • Step #6 Loosen the jelly by holding a hot cloth to the mould & carefully easing it out on to a shallow dish.
  • Step #7 Decorate with mandarin segments macerated in orange juice, ruby red pomegranate seeds & angelica cut into appropriately decorative shapes.
