Ingredients
  • 1 ts Pure vanilla extract
  • 2 c Warm water
  • 2 tb Almond extract
  • 1/4 ts Salt
  • 1 c Cake flour
  • 1 1/2 c Sugar
  • 3/4 c Just Whites whisked in

Directions
  • Step #1 1.
  • Step #2 preheat your trusty oven to 375F.
  • Step #3 Triple sift flour with 3/4 c sugar & the salt.
  • Step #4 2.
  • Step #5 In a large bowl, beat Just Whites at high speed until peaks form.
  • Step #6 slowly beat in the remaining 3/4 c sugar.
  • Step #7 Sprinkle top the almond extract & vanilla over the whites & beat just until they hold firm peaks.
  • Step #8 BE CAREFUL NOT TO OVERBEAT.
  • Step #9 3.
  • Step #10 Sprinkle top a 1/4 of the flour & sugar mix at a time, over the Just Whites mixture & fold carefully, 4.
  • Step #11 Scrape batter into ungreased 10 inch tube pan with removable bottom.
  • Step #12 Bake 45 mins or until top of cake is golden & cake tester inserted near the center of cake comes out clean.
  • Step #13 5.
  • Step #14 Invert pan over narrow necked bottle & cool about 11/2 hrs.
  • Step #15 With a clean knife, separate cake from the edge of the pan.
  • Step #16 Turn upside down onto serving platter.
  • Step #17 EACH SLICE: 155 calories, 0g fat.
