Ingredients
2 c Flour
2 Egg whites
3/4 ts Almond extract
1 c Sugar
3/4 ts Baking soda
2 Eggs
1/2 c Sliced almonds; toasted
1 ts Vanilla
1/4 ts Salt
Directions
Step #1 1.
Step #2 In large bowl, mix flour through salt.
Step #3 2.
Step #4 In smaller bowl, whisk remaining ingredients.
Step #5 Add to dry ingredients & stir until just mixed.
Step #6 3.
Step #7 Turn onto floured surface & shape into 10" log.
Step #8 Place on sprayed baking sheet & bake this at 325F for 35-40 mins until tester comes clean.
Step #9 Let cool 5 mins.
Step #10 4.
Step #11 Reduce oven to 300F.
Step #12 Meanwhile, slice log into 18 pieces.
Step #13 Arrange on same sheet & bake each side for 10 mins until golden brown.
Step #14 Cool until crisp.
Step #15 NOTES : "store this in tight container for up to 1 week.
Step #16 Flavour improves after 1-2 days.
Step #17 " My notes: I needed longer than recommended time, and even could have used a bit longer.
Step #18 Next time, try keeping in oven for 50-55 mins for first baking.
Step #19 Trust tester & colour, not recommended time! Per 1 of 18 equal-sized cookies: 136 calories, 2g fat (16%CFF) 0g sat.
