Ingredients
  • 2 c Flour
  • 2 Egg whites
  • 3/4 ts Almond extract
  • 1 c Sugar
  • 3/4 ts Baking soda
  • 2 Eggs
  • 1/2 c Sliced almonds; toasted
  • 1 ts Vanilla
  • 1/4 ts Salt

Directions
  • Step #1 1.
  • Step #2 In large bowl, mix flour through salt.
  • Step #3 2.
  • Step #4 In smaller bowl, whisk remaining ingredients.
  • Step #5 Add to dry ingredients & stir until just mixed.
  • Step #6 3.
  • Step #7 Turn onto floured surface & shape into 10" log.
  • Step #8 Place on sprayed baking sheet & bake this at 325F for 35-40 mins until tester comes clean.
  • Step #9 Let cool 5 mins.
  • Step #10 4.
  • Step #11 Reduce oven to 300F.
  • Step #12 Meanwhile, slice log into 18 pieces.
  • Step #13 Arrange on same sheet & bake each side for 10 mins until golden brown.
  • Step #14 Cool until crisp.
  • Step #15 NOTES : "store this in tight container for up to 1 week.
  • Step #16 Flavour improves after 1-2 days.
  • Step #17 " My notes: I needed longer than recommended time, and even could have used a bit longer.
  • Step #18 Next time, try keeping in oven for 50-55 mins for first baking.
