Almond-apricot Biscotti Recipe

Ingredients
  • 2 Egg whites
  • 1 Stick Butter
  • 1 tb Dark rum
  • 1/2 c Sugar
  • 6 tb Flour
  • 1 c Ground almonds
  • Grated zest of 1 lemon

Directions
  • Step #1 Cream the softened butter & add the sugar in a stream.
  • Step #2 Continue beating until mixture whitens.
  • Step #3 Beat in the lemon zest & rum, then egg whites, one at a time, beating smooth between each addition.
  • Step #4 Mix the almonds & flour together & stir them into the batter by hand.
  • Step #5 Pipe the batter on paper-lined pans in 1-inch mounds using a 1/2-inch plain tube.
  • Step #6 Bake the cookies at 350 degrees about 12 to 15 mins.
  • Step #7 Cool the cookies on the paper.
