Deep Dark Chocolate Peppermint Cake Recipe

Ingredients
  • 3 drops red food coloring
  • 4 (1 oz) squares unsweetened chocolate
  • 2 egg yolks, beaten
  • 1 tsp baking soda
  • 1 3/4 c milk
  • 1/2 c crushed peppermint hard candies
  • 2 c white sugar
  • 1 recipe Seven Minute Frosting
  • 1 tsp vanilla extract
  • 2 c sifted cake flour
  • 3/4 tsp salt
  • 1/4 c butter

Directions
  • Step #1 Preheat oven to 350 degrees F (175 degrees C).
  • Step #2 Line the bottom(s) of two 9 inch square pans, two 9 inch round pans, or one 9 x 13 inch pan with parchment paper.
  • Step #3 Sift together the cake flour & salt.
  • Step #4 Melt chocolate & shortening together in a double boiler.
  • Step #5 Turn into mixing bowl, & cool to about room temp; this mixture must be cool.
  • Step #6 Mix in sugar.
  • Step #7 Blend in egg yolks & 1 c milk.
  • Step #8 Add flour & salt, & mix just until all flour is dampened.
  • Step #9 Beat batter with electric mixer for 1 min, & then mix in vanilla & 1/2 c milk.
  • Step #10 Dissolve soda in the remaining 1/4 c milk; stir in theto the batter quickly & thoroughly.
  • Step #11 Pour batter into prepared pan(s).
  • Step #12 Bake in 9 x 13 inch pan for about 45 mins, or in two 9 inch pans for about 30 mins.
  • Step #13 Test for doneness by pressing lightly on the cake; it should spring back when done.
  • Step #14 Prepare Seven Minute Frosting, omitting vanilla.
  • Step #15 Tint frosting a delicate pink with a few drops of food coloring, & add 1/4 c crushed candy.
  • Step #16 Frost & fill the cooled cake.
  • Step #17 Garnish with bits of crushed candy.
