Step #1 Preheat the oven to 220?C/475?F/gas mark 7.
Step #2 Sprinkle top or spray some water onto 2 or 3 baking sheets (depending on how big they are).
Step #3 On a lightly floured surface, roll out the pastry to about 3mm thickness.
Step #4 Using a saucer, cut out as many circles as possible (probably 4).
Step #5 Fold the pastry over & re?roll, & cut the remaining 2 circles.
Step #6 Place on the baking sheets.
Step #7 Using a sharp knife, score a 1cm inside rim around the pasrty.
Step #8 Brush the inside of the pastry rim with a little of the egg.
Step #9 Scatter a little demerara sugar over the egg.
Step #10 Now halve, quarter & cut the quarter in half again the apples.
Step #11 Remove the core from the centre of the pieces & then lay the apples, cut sides uppermost inside the pastry circle (the apples should look like boats).
Step #12 When you have filled all the pastry circles, drizzle the apples with the lemon juice, runny honey & the remaining sugar.
Step #13 Sprinkle top with the spices.
Step #14 Brush the outer pastry rim with the remaining egg.
Step #15 Cook the pastry for 12 to 15 mins.
Step #16 serve this with vanilla ice cream & mint.
