An Andalucian Aspic Recipe

Ingredients
  • 3 c Water
  • 1/2 c Couscous -or- Bulgar Wheat
  • 1/4 ts Ground Cumin
  • 1 ts Ground Coriander
  • 1/2 ts Ground Turmeric
  • 2 Zucchini; sliced thick
  • 2 Sweet Potatoes; peeled and chunked
  • 1/4 c Raisins; dark or golden
  • 1 lg Onion; sliced
  • 1/2 ts Ground Cinnamon
  • 15 oz Can Garbanzo beans; , drained
  • 5 Tomatoes; fresh OR 16 0z can tomatoes, drained
  • 2 sliced habaneros; or to taste
  • 1/2 ts Ground Ginger
  • 4 sm Kohlrabies or parsnips; peeled & cut into chunks

Directions
  • Step #1 mix all the ingredients in a large saucepan.
  • Step #2 Bring to a boil, & let simmer until the vegetables are tender, lower the heat, about 30 mins.
  • Step #3 Note: Serve the couscous separately, if desired.
