Fresh Cucumber Aspic
Ingredients
3 c Water
1/2 c Couscous -or- Bulgar Wheat
1/4 ts Ground Cumin
1 ts Ground Coriander
1/2 ts Ground Turmeric
2 Zucchini; sliced thick
2 Sweet Potatoes; peeled and chunked
1/4 c Raisins; dark or golden
1 lg Onion; sliced
1/2 ts Ground Cinnamon
15 oz Can Garbanzo beans; , drained
5 Tomatoes; fresh OR 16 0z can tomatoes, drained
2 sliced habaneros; or to taste
1/2 ts Ground Ginger
4 sm Kohlrabies or parsnips; peeled & cut into chunks
Directions
Step #1 mix all the ingredients in a large saucepan.
Step #2 Bring to a boil, & let simmer until the vegetables are tender, lower the heat, about 30 mins.
Step #3 Note: Serve the couscous separately, if desired.
