Angel Food Cake With Berries In Chocolate Sauce Recipe

Ingredients
  • 2 ts Vanilla
  • 1 ts Fresh lemon juice
  • 1 ts Cream of tartar; if using stainless
  • 1 3/4 c Granulated sugar
  • 14 Egg whites; from large eggs
  • 1 1/2 c Sifted cake flour; sift then measure
  • 1/2 ts Almond extract
  • Steel bowl
  • 1 pn Salt

Directions
  • Step #1 preheat your trusty oven to 300F degrees.
  • Step #2 Sift flour again into dry mixing bowl.
  • Step #3 Sift sugar into a separate bowl; set both aside.
  • Step #4 In a clean copper or stainless-steel bowl, beat egg whites to soft peaks, adding salt when whites are just foamy.
  • Step #5 (If using stainless-steel bowl, add cream of tartar with salt.
  • Step #6 ) carefully fold in sugar with a rubber spatula; fold in flour in 2 batches.
  • Step #7 Do not overmix.
  • Step #8 Add vanilla, almond extract & lemon juice.
  • Step #9 When all ingredients are incorporated, pour batter into an ungreased 10-inch tube pan; smooth top.
  • Step #10 Bake about 1 hr, until cake is a pale & creamy brown color, the top springs back when carefully pressed with finger, & a wooden skewer inserted in center comes out clean.
  • Step #11 Let cool upside down, inverting pan over the neck of a tall bottle.
  • Step #12 To serve, carefully remove cake from pan, releasing sides with a knife.
  • Step #13 Cut cake with a serrated knife or break into pieces with two forks to avoid compressing cake.
  • Step #14 serve this with chocolate sauce or crushed fruit.
  • Step #15 Yield: 10 to 12 servings.
