Angel Hair Pasta With Mushrooms And Caviar Recipe

Ingredients
  • 2 lg Mushrooms; sliced
  • 1 Green onion; sliced
  • 4 Garlic cloves; minced
  • 2 Tomatoes; sliced
  • 1 Tomato; seeded, sliced
  • extra grated Romano cheese
  • 1/8 ts Dried oregano; crumbled
  • 1 1/2 c Grated Romano cheese
  • 4 Eggs
  • 2 tb sliced black olives
  • 1/4 ts Dried basil; crumbled
  • 4 tb Olive oil
  • 2 sm Zucchini; sliced
  • 6 oz Angel hair pasta; freshly cooked

Directions
  • Step #1 Heat 2 tbsps oil in heavy medium skillet over medium-high heat.
  • Step #2 Add zucchini, onion & garlic & saute until tender, mushrooms, 1 tomato, about 3 mins.
  • Step #3 Add olives & herbs.
  • Step #4 Cool.
  • Step #5 Preheat broiler.
  • Step #6 Beat eggs & 1 1/2 c cheese in large bowl.
  • Step #7 Spice up this with salt & pepper.
  • Step #8 Mix in vegetables & pasta.
  • Step #9 Heat remaining 2 tbsps oil in heavy large broilerproof skillet over medium heat.
  • Step #10 Add egg mixture to skillet.
  • Step #11 Press mixture with back of spatula to even thickness.
  • Step #12 cook this until frittata is set & golden brown on bottom.
  • Step #13 Transfer skillet to broiler & cook this until top of frittata is set, about 2 mins.
  • Step #14 Run small knife around edge of frittata to loosen.
  • Step #15 Invert skillet onto large plate.
  • Step #16 Remove skillet.
  • Step #17 Cut frittata into wedges.
  • Step #18 Serve, passing extra cheese and sliced tomatotes separately.
  • Step #19 Serves 4.
