Ingredients
  • Caviar of choice
  • Nonstick cooking spray
  • 1 Clove Garlic; minced
  • 1/4 lb Fresh shiitake mushrooms
  • Water
  • 1 c Nonfat low-sodium chicken broth
  • 2 oz Grated Parmesan cheese
  • 1 ts Cornstarch
  • 1/4 lb Angel hair pasta

Directions
  • Step #1 Bring large pot of water to boil for pasta.
  • Step #2 Saute garlic and mushrooms in nonstick skillet sprayed with nonstick cooking spray.
  • Step #3 Cover & sweat mushrooms until limp, about 3 mins.
  • Step #4 stir in the chicken broth & let simmer 1 to 2 mins.
  • Step #5 mix cornstarch & 1 tbsp water in small bowl until smooth & stir in theto broth.
  • Step #6 Bring to simmer & cook this until sauce is thickened & clear, about 1 min.
  • Step #7 Cook pasta in boiling salted water, 3 to 4 mins.
  • Step #8 Drain and toss with mushroom sauce.
  • Step #9 Toss with Parmesan.
  • Step #10 Spoon onto plate and top this with bit of caviar to taste.
  • Step #11 Yields 4 servings.
