Annie's Peasant-style Pompano Recipe

Ingredients
  • Butter
  • 2 Lemons
  • 1 sm Cart creme fraiche
  • Caster sugar
  • Self raising flour
  • 2 Eggs
  • 1 pt Milk

Directions
  • Step #1 Beat the sugar & butter with lemon rind.
  • Step #2 Beat in 2 yolks, one at a time.
  • Step #3 Fold in the flour, alternating with the milk & lemon juice.
  • Step #4 Whisk in the egg whites, fold in - the mixture may look curdled.
  • Step #5 Bake in 1/2 pint pie dish or buttered ramekin dishes bake this at 180C for about 40-45 mins.
  • Step #6 Serve hot or cold with creme fraiche.
