Another Chicken Curry Recipe

Ingredients
  • 2 tb sliced onion
  • 4 Pompano fillets -;
  • 1/4 c sliced tomatoes
  • 1 tb Mashed roasted garlic cloves
  • 1 tb Oil -;
  • 1 c Veal stock
  • 1/4 c sliced grilled eggplant
  • 1/4 c sliced black olives
  • Cut into small pieces
  • 1/4 c sliced green olives
  • 1/2 Stick Butter; chilled, and
  • Freshly-ground black pepper; to taste
  • 1 1/2 ts sliced thyme
  • Salt; to taste
  • 1 1/2 ts sliced rosemary
  • 1 tb Bayou Blast - ; see Note

Directions
  • Step #1 Note: See the "Bayou Blast - {Emeril's Creole Spice uping}" recipe which is included in this collection.
  • Step #2 Spice up fish fillets with spice.
  • Step #3 Heat oil in a saute pan, add fillets & sear until golden brown.
  • Step #4 Turn carefully & sear second side until golden brown.
  • Step #5 Add olives, tomatoes, onion, eggplant, garlic, & herbs.
  • Step #6 Stir vegetables around taking care not to break fish, 3 mins.
  • Step #7 Add stock, lower heat & let simmer to reduce slightly, bring to a boil, carefully turning fillets several times to cook evenly.
  • Step #8 Whisk in butter a few pieces at a time, & adjust Spice upings to taste with salt & pepper.
  • Step #9 Serve fish with generous spoonfuls of sauce & vegetables.
  • Step #10 This recipe yields 4 servings.
