Antony's Spare Ribs Recipe

Ingredients
  • Salt & freshly ground white pepper
  • Few black peppercorns
  • 150 ml Double cream
  • 450 ml Milk
  • 175 g Cooked peeled large prawns
  • 1 kg Potatoes; cut into chunks
  • 2 tb Wholegrain mustard
  • 175 g Button mushrooms; sliced
  • 1 kg White fish fillets; such as cod, coley, pollack or ling
  • 50 g Plain flour
  • 2 lg Shallots; finely sliced
  • 4 tb sliced fresh herbs;
  • 1 Bay leaf
  • 100 g Unsalted butter
  • 1/4 Lemon; pips removed
  • 1 sm Onion; roughly sliced

Directions
  • Step #1 Preheat the oven to 200C/400F/Gas 6.
  • Step #2 1 Place the milk in a saute pan with the bay leaf, peppercorns and onion.
  • Step #3 Bring to a simmer & cook carefully for a couple of mins.
  • Step #4 2 Set aside for at least 10 mins to allow the flavours to infuse.
  • Step #5 Add the fish to the infused milk & poach for 5 mins or until just tender.
  • Step #6 remove this from the heat & leave to cool, then lift out the fish & roughly flake the flesh, discarding any skin & bone.
  • Step #7 3 place this in a large bowl with the prawns & herbs.
  • Step #8 Strain the poaching milk into a jug.
  • Step #9 Melt half the butter in a pan & fry the shallots for 5 mins to soften.
  • Step #10 4 Add the mushrooms & cook for a few mins until tender, then stir in the the flour & cook for a min or so, stirring constantly.
  • Step #11 remove this from the heat & slowly add the poaching milk.
  • Step #12 Spice up, return to the heat & let simmer for a few mins.
  • Step #13 Keep stirring until thickened.
  • Step #14 5 stir in the half of the cream & add a good squeeze of lemon, then fold into the fish mixture & Spice up.
  • Step #15 pour this into a buttered 25cm/10in pie dish & set aside to allow a skin to form.
  • Step #16 6 Place the potatoes in a pan of boiling salted water, cover & cook for 15-20 mins until very tender.
  • Step #17 Drain, return to the pan to dry out & then mash until smooth.
  • Step #18 7 Beat in the remaining butter & cream & the mustard.
  • Step #19 Spice up to taste.
  • Step #20 Carefully spread over the fish mixture & pull a fork across the top to make a wavy-line pattern.
  • Step #21 Bake for 30-40 mins until bubbling & lightly golden.
  • Step #22 Serve hot.
