Step #1 Pre-heat the oven to 180 C, 350 F, Gas Mark 4.
Step #2 Place the apple with 3 tbsps of water into a saucepan over a moderate heat.
Step #3 Cook the apple for approximately 10 mins until it becomes soft & pulpy , stirring every once in awhile.
Step #4 Place the cooked apple into a mixer or food processor/blender & mix for 30 seconds.
Step #5 Pour the puree onto a plate to cool for 10 mins.
Step #6 Whilst the apple is cooling, place the biscuits into the mixer or food processor/blender & mix for 30 seconds.
Step #7 Melt the butter in a saucepan over a moderate heat.
Step #8 Add the biscuit crumbs to the melted butter & mix well.
Step #9 Pour the crumb mixture into a 20cm ( 8 inch )loose based ( spring form clip ) tin & press the crumb mixture down.
Step #10 put in the fridge the base until the cheese mixture is ready for use.
Step #11 Place the cream cheese & sugar in a mixing bowl & beat well for approximately two mins.
Step #12 Add the beaten eggs , cornflour , apple puree & spice & mix until incorporated.
Step #13 Pour in the cream and mix for a further min.
Step #14 Pour the cheesecake mixture onto the biscuit base.
Step #15 Place the tin onto a baking sheet & place this into the pre-heated oven.
Step #16 Bake the cheesecake for 1 hr & then turn the oven off leaving the cheesecake in the oven for a further 30 mins Cool the cheesecake in the tin.
Step #17 Notes Serve at about room temp with soured cream.
