Apple And Potato Salad With Mustard Cream Dressing Recipe

Ingredients
  • 1 ea Small onion; sliced thin
  • Salt
  • 4 ea Boneless Pork Chops; trimmed
  • 1/2 c Chicken Stock
  • sliced Parsley or Coriander
  • 1 ea Clove of Garlic; minced
  • 1 ea Small Sweet Red Pepper
  • 1 ea Tart Cooking Apple
  • 1 ts Curry Powder
  • 1/2 ts Ground Cumin
  • Freshly Ground Black Pepper
  • 2 tb Olive Oil
  • 1/2 ts Cinnamon
  • 1 ts Cornstarch

Directions
  • Step #1 The cooking apple should be peeled & sliced, the pepper should be seeded & cut into thin strips.
  • Step #2 In a heavy frypan, heat oil over medium-high heat.
  • Step #3 Cook pork chops until browned on both sides & almost cooked through; remove this from pan & set aside.
  • Step #4 over med-heat/flame, cook the onion, garlic, apple & red pepper strips for 2 mins or until softened.
  • Step #5 mix chicken stock with cornstarch; add to pan along with curry powder, cumin & cinnamon; cook for 1 or 2 mins until slightly reduced & thickened.
  • Step #6 Return pork chops to frypan; adjust Spice uping with salt & pepper.
  • Step #7 Cook for 1 or 2 mins or until heated through.
  • Step #8 Serve pork chops with sauce & Sprinkle top with fresh sliced parsley or coriander.
  • Step #9 serve this with quick-cooking couscous flavoured with sliced green onions & raisins or dried cherries.
  • Step #10 NOTES : This was delicious.
  • Step #11 The pork was very tender (I used boneless pork loin chops.
  • Step #12 ) & the mix of flavors was very interesting.
  • Step #13 I used dried cherries in the couscous.
