Step #1 The cooking apple should be peeled & sliced, the pepper should be seeded & cut into thin strips.
Step #2 In a heavy frypan, heat oil over medium-high heat.
Step #3 Cook pork chops until browned on both sides & almost cooked through; remove this from pan & set aside.
Step #4 over med-heat/flame, cook the onion, garlic, apple & red pepper strips for 2 mins or until softened.
Step #5 mix chicken stock with cornstarch; add to pan along with curry powder, cumin & cinnamon; cook for 1 or 2 mins until slightly reduced & thickened.
Step #6 Return pork chops to frypan; adjust Spice uping with salt & pepper.
Step #7 Cook for 1 or 2 mins or until heated through.
Step #8 Serve pork chops with sauce & Sprinkle top with fresh sliced parsley or coriander.
Step #9 serve this with quick-cooking couscous flavoured with sliced green onions & raisins or dried cherries.
Step #10 NOTES : This was delicious.
Step #11 The pork was very tender (I used boneless pork loin chops.
Step #12 ) & the mix of flavors was very interesting.
Step #13 I used dried cherries in the couscous.
