Apple Berry Clafouti Recipe

Ingredients
  • 1 Brisket of beef
  • 2 1/2 c Apple cider
  • 1/4 c Soy sauce
  • Salt & pepper to taste
  • 1 1/2 tb Minced fresh ginger root
  • 1/4 c Blackstrap molasses
  • 2 tb Yellow mustard
  • 1/4 c Cider vinegar
  • 1/3 c Honey
  • 1 tb Minced garlic
  • 1 c Beer
  • 1/2 c White wine

Directions
  • Step #1 Mix wine, salt & pepper, honey, garlic, molasses, soy sauce, vinegar, cider, beer, mustard, ginger root in Dutch oven or heavy roasting pan.
  • Step #2 Add the brisket.
  • Step #3 Cover & place this in oven.
  • Step #4 Be sure to pre-heat oven to 375 degrees F & cook for 50 mins.
  • Step #5 Remove brisket from cooking liquid, cover & set aside.
  • Step #6 Transfer liquid to a pan & cook over medium heat until reduced to a glaze & fairly thick.
  • Step #7 Use a covered grill get coals & either hickory, apple, or mesquite going & smoke the brisket 1 hr.
  • Step #8 Turn the meat & brush on a glaze of sauce every 20 mins.
