Apple Souffle Recipe

Ingredients
  • 3 tb Sugar
  • 3 Granny Smith apples; , peeled and cut into1/2-inch pieces
  • 2 c Clear apple juice
  • 1 tb Fresh lemon juice

Directions
  • Step #1 In a large saucepan mix all ingredients & a pinch salt and simmer, 10 mins, uncovered, or until apples are very tender.
  • Step #2 Strain mixture through a sieve into a mixer & add half of solids in sieve to mixer, discarding remaining solids.
  • Step #3 Puree apple mixture & chill until cold.
  • Step #4 Freeze sorbet in an ice-cream maker.
  • Step #5 Sorbet may be made 1 week ahead.
  • Step #6 Makes about 3 c.
