Apple-nut Salad And Tofu-honey Dressing Recipe

Ingredients
  • 2 Bibb lettuce leaves
  • 1 c Chicken stock
  • 1 c Couscous
  • Freshly-ground black pepper; to taste
  • 1 tb Olive oil
  • 1 tb Minced shallots
  • 1 ts Unsalted butter
  • 1 c Peeled; finely-sliced sweet apples
  • 1 tb Unsalted butter; plus
  • 1/4 c Toasted; shelled pumpkin seeds
  • 1 lg Pita; toasted, and cut in 8 triangles
  • Salt; to taste
  • 3 tb sliced fresh mint
  • 1 ts Minced garlic
  • 1/4 c Crumbled feta cheese -;

Directions
  • Step #1 In a large skillet, melt 1 tbsp of butter over high heat.
  • Step #2 Add apples, garlic, mint, shallots, salt & pepper to taste, & saute for 2 mins.
  • Step #3 Add the couscous & olive oil & saute, stirring, for 1 min.
  • Step #4 Now stir in the the chicken stock & bring to a boil, stirring for 2 mins.
  • Step #5 Reduce heat to medium & cook for 1 min.
  • Step #6 stir in the remaining butter & turn off the heat.
  • Step #7 Cover & allow to sit for 2 mins.
  • Step #8 Uncover & allow this to cool to about room temp.
  • Step #9 When cool, fluff with a fork & fold in the pumpkin seeds & feta cheese, add salt & pepper to taste.
  • Step #10 serve this with toasted pita triangles, on a bed of crisp bibb lettuce.
  • Step #11 This recipe yields 3 1/2 c of salad.
