Ingredients
  • 1 Whole Egg; lightly beaten
  • 2/3 c Bran Cereal;
  • 1/2 ts Cinnamon
  • 1 1/2 c Whole-wheat Flour
  • 1/2 c Raisins;
  • 1/2 ts Salt
  • 1/3 c Brown Sugar; firmly packed
  • 2 tb Canola Oil
  • 1 ts Baking Soda
  • 1/4 c Walnuts; sliced
  • 1 3/4 c Unsweetened Applesauce

  • Step #12 Divide the batter among the prepared muffin tins & bake for about 15 mins, or until the top of a muffin springs back when touched lightly.
  • Step #13 Loosen the edges of the muffins with a small kitchen knife & turn them out onto a wire rack to cook.
  • Step #14 Can store up to 3 days at about room temp, wrapped, or put in the fridge, for up to a week.
