Apricot Almond Tea Bread Recipe

Ingredients
  • 1/4 ts Almond extract; pure
  • 1 Egg
  • 1 tb Almonds; finely sliced
  • 3/4 c Granulated sugar
  • 1 tb Baking powder
  • 1/2 ts Vanilla extract; pure
  • 1/3 c Unsalted butter; melted
  • 3/4 c Dried apricots
  • 2 tb Nonfat dry milk powder; up to 4 tbsps
  • 2 Egg whites
  • 2 c All-purpose flour
  • 1 c Milk; 2% lowfat
  • 1 c Boiling water

Directions
  • Step #1 1.
  • Step #2 preheat your trusty oven to 350F/180C.
  • Step #3 2.
  • Step #4 Chop dried apricots.
  • Step #5 The easiest way to do this is to cut them with scissors.
  • Step #6 Place apricot pieces in a bowl & cover with the boiling water.
  • Step #7 Allow them to rest for 10 mins while preparing the batter.
  • Step #8 3.
  • Step #9 mix the flour, dry milk powder, baking powder, & sugar.
  • Step #10 Stir together well.
  • Step #11 4.
  • Step #12 mix the egg, milk, egg whites, melted butter & extracts.
  • Step #13 Pour the wet ingredients over the dry ingredients & stir only until mixed.
  • Step #14 5.
  • Step #15 Drain the apricots & pat dry with paper towels.
  • Step #16 Stir them into the batter.
  • Step #17 Spoon the mixture into a buttered 8-inch x 4-inch/1.
  • Step #18 5-L loaf pan.
  • Step #19 Sprinkle top sliced almonds on top & press lightly into batter.
  • Step #20 6.
  • Step #21 Bake for 1 hr.
  • Step #22 Allow the loaf to rest in the pan for 10 mins before inverting onto a wire rack to cool.
  • Step #23 Makes one 9-in x 5-in/2 L loaf.
