Apricot And Cardamom Cream Recipe

Ingredients
  • 2 Dsp brandy
  • 140 ml Vegetable stock
  • 4 Dsp concentrated turkey juices
  • 55 g Apricots; shredded
  • Peel of an orange
  • 1 Dsp apricot jam

Directions
  • Step #1 Drain & strain the turkey juices into a saucepan at a moderate heat, & reduce the liquid to half, concentrating the flavour.
  • Step #2 Add the stock, shredded apricots, orange peel & apricot jam.
  • Step #3 Bubble for several mins until the sauce thickens.
  • Step #4 Turn off the heat & add the brandy before serving.
  • Step #5 You can brush the whole turkey with a little of the sauce before serving to bring up the colour & sweeten the flavour of the juices from the turkey.
