Apricot And Oat Bars Recipe

Ingredients
  • 3/4 ts Ground cinnamon
  • 50 g Toasted pine kernels;
  • 1 Medium-sized onion; finely sliced
  • 5 tb Vegetable oil
  • 1 ts Sugar;
  • 450 ml Hot water;
  • 1 kg Boned lean lamb; cubed
  • 250 g Dried apricots;
  • 2 tb Lemon juice

Directions
  • Step #1 Heat the oil & brown the onion lightly.
  • Step #2 Add the lamb & fry carefully until evenly browned.
  • Step #3 Drain off excess fat.
  • Step #4 Add the cinnamon, lemon juice & hot water to just cover the meat, cover the pan & cook for about 40 mins.
  • Step #5 Add the sugar & the apricots & cook for another 30 mins.
  • Step #6 Sprinkle top with the toasted pine kernels if using them & serve this with plain rice.
  • Step #7 If you want to make this with fresh fruit, substitute the apricots with 750g (1 1/2 lb) pears, quinces or a good eating apple such as Cox''s.
  • Step #8 The fruit should not be too ripe.
  • Step #9 Peel, core & slice it thickly.
  • Step #10 Add quinces to the meat & cook for 40 mins; add apples & pears for the last 10 mins of the cooking time.
