Apricot Brandy Cake Recipe

Ingredients
  • 1/4 c Apricot preserves
  • 1 oz Bourbon
  • 1/2 c Sliced yellow onion
  • 1 c Cooked wild rice
  • 1/2 c Teriyaki sauce
  • 4 tb Dijon mustard
  • 1/2 c Sliced green pepper
  • 2 tb Light corn oil
  • 4 2 oz. medallions center cut pork loin

Directions
  • Step #1 Marinate pork 1/2 hr in teriyaki sauce.
  • Step #2 Heat skillet with oil to approximately 300F degrees.
  • Step #3 Saute pork to medium & add vegetables, cooking slightly longer to keep vegetables slightly crisp.
  • Step #4 Remove from skillet & place over bed of rice.
  • Step #5 Using saute pan, add 1 oz.
  • Step #6 bourbon to deglaze pan.
  • Step #7 Add preserves & mustard, mixing well.
  • Step #8 Bring to a light boil.
  • Step #9 Pour evenly over pork & vegetables.
  • Step #10 Serve.
  • Step #11 TIPS: Do not over marinate meat as this will rob natural flavor and dry it out.
