Apricot Glaze Recipe

Ingredients
  • 2 tb Grand Marnier; brandy or orange juice
  • 284 ml Double cream;
  • 50 g Soft light brown sugar;
  • 125 g Butter;
  • 50 g Ground rice;
  • 125 g Plain flour;
  • 1 Sprig mint & a little icing sugar to decorate
  • 50 g Icing sugar; sifted
  • 1 ts Ground ginger
  • 6 Apricots or 3 peaches; thinly sliced

Directions
  • Step #1 Preheat the oven to 180?C/350?F/Gas Mark 4.
  • Step #2 Rub together the butter, flour & ground rice.
  • Step #3 stir in the the sugar and ginger then carefully knead together.
  • Step #4 Roll out on a lightly floured surface & cut out 18 rounds with a 6cm (2 1/2 inch) cutter.
  • Step #5 Place rounds on lightly greased baking trays & bake in the preheated oven for 12 mins, until golden.
  • Step #6 Transfer to a wire rack to cool.
  • Step #7 Whisk the cream then fold in the icing sugar & liqueur or fruit juice.
  • Step #8 Spread a tsp of the cream on a shortbread round & top this with slices of apricot, repeat to form 3 layers, finishing with cream and apricots.
  • Step #9 Repeat to make 6 galettes.
  • Step #10 Arrange a sprig of mint on top of each & dredge with icing sugar.
  • Step #11 Serve as soon as possible.
