Apricot Mustard Sauce Recipe

Ingredients
  • 1 500 gram car virtually fat-free fromage; frais
  • 2 ts Lemon juice
  • 11 g Sachet of gelatine;
  • Orange slices; to decorate
  • 175 ml Water;
  • 250 g Ready-to-eat dried apricots;
  • 1 Orange; juice of

Directions
  • Step #1 Place the apricots in a saucepan with the water & bring to the boil.
  • Step #2 Reduce the heat & let simmer for 10 mins, then remove this from the heat, reserving the cooking liquid, drain, & leave to cool for 10 mins.
  • Step #3 Put 3 tbsps water in a small heatproof bowl, Sprinkle top it over the gelatine & leave to soak for 5 mins.
  • Step #4 Stand the heatproof bowl over a saucepan of simmering water & heat carefully until the gelatine has dissolved, stirring constantly.
  • Step #5 Remove from the heat & leave to cool for 5 mins.
  • Step #6 Put the apricots, their cooking liquid, the fromage frais, orange juice & lemon juice in a mixer or food processor/blender & mix until smooth.
  • Step #7 pour this into a bowl.
  • Step #8 slowly mix the gelatine into the apricot mixture, mix well and pour this into a 1.
  • Step #9 2 litre (2-pint) serving bowl.
  • Step #10 Chill for 2 hrs or until set.
  • Step #11 Decorate with orange slices before serving.
