Ingredients
1 500 gram car virtually fat-free fromage; frais
2 ts Lemon juice
11 g Sachet of gelatine;
Orange slices; to decorate
175 ml Water;
250 g Ready-to-eat dried apricots;
1 Orange; juice of
Directions
Step #1 Place the apricots in a saucepan with the water & bring to the boil.
Step #2 Reduce the heat & let simmer for 10 mins, then remove this from the heat, reserving the cooking liquid, drain, & leave to cool for 10 mins.
Step #3 Put 3 tbsps water in a small heatproof bowl, Sprinkle top it over the gelatine & leave to soak for 5 mins.
Step #4 Stand the heatproof bowl over a saucepan of simmering water & heat carefully until the gelatine has dissolved, stirring constantly.
Step #5 Remove from the heat & leave to cool for 5 mins.
Step #6 Put the apricots, their cooking liquid, the fromage frais, orange juice & lemon juice in a mixer or food processor/blender & mix until smooth.
Step #7 pour this into a bowl.
Step #8 slowly mix the gelatine into the apricot mixture, mix well and pour this into a 1.
Step #9 2 litre (2-pint) serving bowl.
Step #10 Chill for 2 hrs or until set.
Step #11 Decorate with orange slices before serving.
