Apricot-glazed Ham With Maple Mustard Sauce Recipe

Ingredients
  • 1/4 c Apricot preserves;
  • 4 c Carrots; sliced crosswise into 1/4-inch slices
  • 1/2 ts Grated orange peel; fresh
  • 2 ts Lemon juice
  • 1/4 ts Ground nutmeg

Directions
  • Step #1 1.
  • Step #2 Place a steamer rack in the bottom of a medium saucepan.
  • Step #3 Add enough water to come almost up to the bottom of the rack.
  • Step #4 Place saucepan over medium heat.
  • Step #5 When water boils, add carrots, cover saucepan, & cook 10 mins, or until carrots are tender.
  • Step #6 Drain.
  • Step #7 2.
  • Step #8 While carrots are cooking, mix remaining ingredients in a small bowl.
  • Step #9 Mix well.
  • Step #10 Add a little water or orange juice (a tsp at a time) if sauce is too thick.
  • Step #11 3.
  • Step #12 Place carrots in a serving bowl.
  • Step #13 Spoon sauce over carrots.
  • Step #14 Toss and serve.
