Banana Pudding Recipe

Ingredients
  • 250 g Butter
  • 60 g Brown sugar
  • 175 g Caster sugar
  • --PUDDING-----
  • 175 g Self raising flour
  • 3 Eggs
  • 60 ml Whisky
  • 1 lg Banana
  • 30 g Walnuts; lightly broken

Directions
  • Step #1 TOFFEE SAUCE--- 90 g Caster sugar 60 g Butter 90 ml Double cream 60 ml Whisky Grease 4 x1 inch glass ramekins & dust with a little flour.
  • Step #2 Cream the butter & sugar until light & fluffy.
  • Step #3 Add the eggs a little at a time & beat well.
  • Step #4 Fold in the flour & place the mix into a piping bag.
  • Step #5 Dice the banana & mix with the sugar, whisky & lightly broken walnuts, place this into the base of the moulds.
  • Step #6 Divide the mixture into 4 & pipe over the banana topping.
  • Step #7 Cover with foil & place this into a double boiler in the oven for 40 mins or until firm to the touch.
  • Step #8 Toffee sauce: Dissolve the sugar in a heavy based pan & add the butter, cook this until golden.
  • Step #9 Add the double cream & whisky, serve with the pudding.
