Banana Pudding Recipe

Ingredients
  • 2 1/2 ts Cornstarch
  • 1/2 c Sliced ripe banana
  • 8 Vanilla wafers
  • 2 1/2 tb Sugar
  • 1/4 ts Vanilla extract
  • 3/4 c Skim milk
  • 1 Egg yolk
  • 1 ds Salt

Directions
  • Step #1 mix first 3 ingredients in top of a double boiler.
  • Step #2 slowly add milk & yolk; stir well.
  • Step #3 Place over simmering water; cook 4 mins or until smooth & thickened, stirring constantly.
  • Step #4 remove this from heat; stir in the banana & vanilla.
  • Step #5 Divide mixture evenly between 2 (6-oz) custard c.
  • Step #6 Arrange 4 cookies around edge of each c, pushing cookies into pudding.
  • Step #7 Cover with plastic wrap; chill at least 2 hrs.
