Banana Yogurt Smoothie Recipe

Ingredients
  • 1/2 ts Salt
  • 1 c Toasted Wheat Germ
  • 1/2 c Firmly Packed Light Brown Sugar
  • 1 c Mashed Ripe Bananas;
  • 1/4 c Canola Oil
  • 2 lg Eggs
  • 1 1/2 c Unbleached Flour
  • 2 1/2 ts Baking Powder
  • 1/2 c Finely sliced Walnuts
  • 1/2 c Low-Fat Milk
  • 1/4 ts Ground Nutmeg

Directions
  • Step #1 1.
  • Step #2 preheat your trusty oven to 400F degrees.
  • Step #3 Butter the insides & top of a regular size (1/3 c) muffin pan.
  • Step #4 2.
  • Step #5 In a medium size bowl thoroughly mix the flour, walnuts, sugar, baking powder, wheat germ, nutmeg & salt.
  • Step #6 3.
  • Step #7 Beat the eggs in a large bowl.
  • Step #8 Beat in the mashed banana, being certain to break up any large lumps.
  • Step #9 Beat in the milk & oil until smooth.
  • Step #10 Add the dry mixture to this bowl & stir just until it is evenly moistened.
  • Step #11 Do not overbeat it.
  • Step #12 4.
  • Step #13 Spoon the batter into the prepared muffin pan.
  • Step #14 Bake about 17 mins or until a knife inserted in the center of a muffin comes out dry.
  • Step #15 Cool the muffins on a rack a few mins before serving.
  • Step #16 They are better warm, not hot.
