Bananas Foster Tart Recipe

Ingredients
  • 1/4 ts Vanilla extract
  • 1 Egg yolk; beaten
  • 1 tb Cinnamon
  • 2 c Heavy cream
  • 2 Extra-large eggs; beaten
  • 3 tb Sugar
  • 4 sl Challah or egg bread
  • 4 Ripe bananas; sliced in 1/4-inch rounds
  • 3 tb Confectioner's sugar
  • 3 tb Canola oil
  • 4 tb Unsalted butter

Directions
  • Step #1 In a large bowl mix the cream, eggs & vanilla & mix thoroughly.
  • Step #2 In another, smaller bowl, mix together the sugar and cinnamon.
  • Step #3 Dip the slices of bread briefly in the cream mixture and Sprinkle top the cinnamon sugar on both sides.
  • Step #4 Meanwhile, melt 1 tbsp of butter & 2 tbsps of canola oil in a large saute pan.
  • Step #5 When the butter mixture is hot, 2 slices at a time & saute on each side until golden brown, add the bread, about 1 min per side.
  • Step #6 Remove & reserve the slices & saute the remaining slices.
  • Step #7 As an option, you may deep fry the slices at this point at 350 degrees for about 30 seconds to make the toast extra-crisp.
  • Step #8 Heat the remaining butter & oil in another saute pan.
  • Step #9 Sprinkle top the bananas with the cinnamon sugar, add them to the pan & saute until the bananas are well coated & caramelized.
  • Step #10 Place 2 slices of French toast, overlapping, on each of 2 plates and pour the bananas over them.
  • Step #11 Dust them with the confectioner's sugar shaken from a strainer or shaker.
  • Step #12 Serve as soon as possible.
  • Step #13 Yield: 2 servings.
