Barbara Eden's Seven-layer Cookies Recipe

Ingredients
  • INGREDIENTS NEEDED FOR TOPPING
  • 1 1/2 tb Cornstarch
  • 1 tb Sugar
  • 1/8 ts Cinnamon
  • INGREDIENTS NEEDED FOR BLUEBERRY FILLING
  • 1 c Flour
  • INGREDIENTS NEEDED FOR CHERRY FILLING
  • 1/2 ts Lemon juice
  • 1/2 c Sugar; +
  • 1/2 c Milk
  • 1 cn Sour pie cherries
  • 1 1/2 ts Baking powder
  • 2 c Fresh or frozen unsweetened blueberries
  • 3 tb Butter
  • 1/2 ts Cornstarch
  • 1/8 ts Almond extract
  • 2 tb Sugar
  • 1/2 ts Salt
  • 1/4 c Sugar

Directions
  • Step #1 How to Prepare the Blueberry Filling: Mix sugar & cornstarch in a saucepan & add all the other ingredients.
  • Step #2 cook this until thickened.
  • Step #3 Put into an 8x8 inch pyrex pan and keep hot in a 250 degree oven while making cherry filling.
  • Step #4 How to Prepare the Cherry Filling: In a saucepan, mix dry ingredients.
  • Step #5 slowly stir in the the juice from the canned cherries & cook this until thickened, adding cherries and flavorings at the end.
  • Step #6 Smooth cherry filling over blueberry mixture.
  • Step #7 Keep hot while making topping.
  • Step #8 How to Prepare the Topping: Mix dry ingredients & butter until it is like fine crumbs.
  • Step #9 stir in the milk & drop by spoonfuls onto hot filling.
  • Step #10 bake this at 400F degrees F.
  • Step #11 for 25-30 mins or until topping is browned.
  • Step #12 Serve topped with vanilla ice cream.
