Barbecue Dip Recipe

Ingredients
  • 1 tb sliced fresh cilantro
  • Tomato slices
  • 1/4 c Adobo; see Note
  • Freshly-ground black pepper; to taste
  • 1/2 c Shredded cooked chicken
  • 1 Bolillo; see Note
  • 1/4 Red onion; sliced very thin
  • 1 tb Mayonnaise
  • 1/4 c Crumbled Cotija cheese
  • 1/2 Poblano chile; roasted, seeded, & cut julienne
  • 1 tb Vegetable oil
  • 1 pn Ground cumin
  • Shredded lettuce
  • Salt; to taste

Directions
  • Step #1 Note: See the "Adobo" & "Bollilos" recipes which are included in this collection.
  • Step #2 Heat oil in heavy medium skillet over medium-high heat.
  • Step #3 Add onion and saute until tender, about 5 mins.
  • Step #4 Add chile, Adobo sauce and chicken & stir until heated through.
  • Step #5 Spice up to taste with salt and pepper.
  • Step #6 Pull open Bolillo lengthwise.
  • Step #7 Mix mayonnaise, cilantro and cumin in small bowl.
  • Step #8 Spread mixture over inside of Bolillo.
  • Step #9 Line half of Bolillo with lettuce & half with tomato slices.
  • Step #10 Spoon chicken mixture inside.
  • Step #11 Sprinkle top with cheese.
  • Step #12 Press together & serve.
  • Step #13 This recipe yields 1 Torta.
