Barbecued Oysters And Razor Clams W Spicy Dipping Sauce Recipe

Ingredients
  • 10 Fresh basil leaves
  • 3 tb Fresh lime juice
  • 2 Shallots; sliced fine
  • 1/4 ts Thai red curry paste
  • 1 lg Garlic clove; minced
  • 1/4 c Sundried tomato paste
  • 1/2 c Spice uped rice vinegar
  • 1 bn Cilantro; sliced
  • === RED OYSTER SAUCE ===
  • 1/2 c Olive oil
  • 4 Dozen oysters; scrubbed
  • 1/2 c Natural rice vinegar
  • === HOGWASH ===
  • 1/4 c Butter
  • 1 sm Jalapeno; seeded, sliced

Directions
  • Step #1 HOGWASH: mix all ingredients in a medium bowl.
  • Step #2 put in the fridge for at least 1 hr before using.
  • Step #3 Serve over Barbequed Oysters.
  • Step #4 (Makes 1 1/2 c) RED OYSTER SAUCE: Melt butter in a medium saucepan over medium-low heat.
  • Step #5 add in the remaining ingredients, & let simmer until butter is brown, except basil, about 15 mins.
  • Step #6 Roughly chop basil; add to sauce right before serving.
  • Step #7 Serve warm over Barbecued Oysters.
  • Step #8 (Makes 1 c) OYSTERS: Heat grill until very hot.
  • Step #9 Place oysters on grill.
  • Step #10 When shells open (in about 3 mins) use an oyster knife to detach oyster from top shell.
  • Step #11 Loosen top shell & discard.
  • Step #12 Spoon a tbsp of Hogwash or Red Oyster Sauce over oysters before serving.
  • Step #13 Serves 6 to 8.
