Barley Stuffed Zucchini Recipe

Ingredients
  • 2 c Grated zucchini
  • 1 c Water
  • 1 ts Hickory smoke salt
  • 1/2 c Pearl barley
  • 1/2 c Barbecue sauce;
  • 1 Chicken bouillon cube
  • 1 c sliced onion
  • 1 Clove garlic; minced
  • 2 Egg whites
  • 1/2 ts Poultry Spice uping
  • 6 Green bell pepper halves
  • 1 c sliced carrot

Directions
  • Step #1 Add onion, garlic, carrots, salt, bullion, poultry Spice uping and barley to water in a saucepan.
  • Step #2 Bring to a boil & let simmer for 25 to 30 mins.
  • Step #3 stir in the the zucchini, egg whites & barbecue sauce.
  • Step #4 Remove seeds from pepper halves & place the peppers in a steamer or microwave.
  • Step #5 Steam for 5 mins.
  • Step #6 Fill halves with the barley mixture & bake this at 350/ for 40 mins or until the filling is firm.
  • Step #7 Add more barbecue sauce, if desired.
  • Step #8 1 pepper half is approximately 130 calories without added sauce.
