Barley Torte Recipe

Ingredients
  • 1/2 c sliced Mushrooms
  • 1 ts Dried Basil
  • Red Hot Sauce to taste
  • 1/4 c sliced Onion
  • 3/4 c sliced Plum Tomatoes
  • 2 tb Fresh sliced Parsley
  • 1/2 c sliced Green Peppers
  • 1 Clove Garlic; peeled and sliced
  • 4 tb Romano Cheese
  • 1 c Cooked Barley; Cooled
  • 3/4 c Shredded Fat-free Mozzarella Cheese
  • 2 md Zucchini; cut in half lengthwise

Directions
  • Step #1 1.
  • Step #2 Scoop out flesh from center of zucchini halves.
  • Step #3 Chop flesh and reserve.
  • Step #4 Place zucchini shells in microwave-safe covered container.
  • Step #5 Microwave on high 3 to 5 mins until tender.
  • Step #6 2.
  • Step #7 In large nonstick skillet, saut? garlic & onions over medium heat 5 mins.
  • Step #8 Add sliced zucchini, mushrooms, parsley, basil, peppers, tomatoes, hot pepper sauce.
  • Step #9 Cook 10 mins.
  • Step #10 Add barley and mozzarella; mix well & spoon into zucchini shells.
  • Step #11 Sprinkle top with grated cheese.
  • Step #12 Bake in 350? oven 25 to 30 mins.
