Basic Tamale Dough With Sweet Roasted Corn Recipe

Ingredients
  • Salt; to taste
  • 2 c Masa harina
  • Cumin; to taste
  • 1/2 c Finely-sliced onion
  • 2 c Warm water
  • Freshly-ground black pepper; to taste
  • Chili powder; to taste
  • 1 c Lard or vegetable shortening

Directions
  • Step #1 In a bowl beat 2 c warm water into masa harina to make a stiff, smooth dough.
  • Step #2 In a large bowl, beat lard with electric mixer or wooden spoon until light & fluffy.
  • Step #3 Begin adding masa, a handful at a time, beating constantly.
  • Step #4 When all masa is incorporated, cumin, beat in onions & Spice up to taste with chili powder, salt & pepper.
  • Step #5 This recipe yields enough dough to make 25 tamales.
