Ingredients
  • 3 Jalapeno or serrano chiles; stemmed and
  • 1/2 ts Kosher salt
  • & cored
  • Coarsely sliced;
  • Removed; washed of their sticky surfaces,
  • 1 md White onion; coarsely sliced
  • 8 Grinds of black pepper
  • 8 Cilantro Sprigs; sliced
  • 10 Tomatillos; , papery husks

Directions
  • Step #1 Bring salted water to a boil.
  • Step #2 Drop in the tomatillos & boil for 1 min.
  • Step #3 do not overcook.
  • Step #4 Drain & chop.
  • Step #5 Place the tomatillos, salt, chiles, onion, cilantro, & pepper in a mixer container.
  • Step #6 mix to a coarse puree.
  • Step #7 Taste for Spice uping and serve at about room temp within 3 hrs.
  • Step #8 Varation: Creamy Tomatillo & Avocado Table Salsa Peel & pit 1 ripe Hass avocado & scoop the flesh into the mixer with the room-temperature tomatillo salsa.
