Basil Lime Mayonnaise Recipe

Ingredients
  • 24 Hard-cooked eggs
  • Salt
  • Freshly-ground black pepper
  • 1/4 c Fresh basil leaves
  • 1 tb Freshly grated parmesan
  • 1/2 c Mayonnaise

Directions
  • Step #1 Bring a small pan of water to boil.
  • Step #2 Drop in basil leaves for 30 seconds to blanch.
  • Step #3 Drain & rinse under cold water.
  • Step #4 (Blanching helps the basil stay green.
  • Step #5 ) Peel the eggs & cut each in half.
  • Step #6 Place yolks in a food processor/blender with the blanched basil leaves, mayonnaise & cheese.
  • Step #7 Puree until smooth.
  • Step #8 Spice up to taste with salt & pepper.
  • Step #9 Fill egg white halves with filling.
  • Step #10 Cover with plastic wrap and put in the fridge until ready to serve.
  • Step #11 Makes 48.
