Ingredients
24 Hard-cooked eggs
Salt
Freshly-ground black pepper
1/4 c Fresh basil leaves
1 tb Freshly grated parmesan
1/2 c Mayonnaise
Directions
Step #1 Bring a small pan of water to boil.
Step #2 Drop in basil leaves for 30 seconds to blanch.
Step #3 Drain & rinse under cold water.
Step #4 (Blanching helps the basil stay green.
Step #5 ) Peel the eggs & cut each in half.
Step #6 Place yolks in a food processor/blender with the blanched basil leaves, mayonnaise & cheese.
Step #7 Puree until smooth.
Step #8 Spice up to taste with salt & pepper.
Step #9 Fill egg white halves with filling.
Step #10 Cover with plastic wrap and put in the fridge until ready to serve.
Step #11 Makes 48.
Step #12 Per serving: 55 calories; 3 g protein; 1 g carbohydrates; 4 g fat; 108 mg cholesterol; 47 mg sodium.
Step #13 Calories from fat: 72 percent.
